Ingredients:
2 cups shredded coconut (unsweetened)
3 cups quick-cooking rolled oats (GF if needed)
1/2 cup oat flour (GF if needed)
1 cup walnuts, chopped finely
1 1/2 cups dried cranberries (juice-sweetened)
1 1/2 cups applesauce, unsweetened
2/3 cup brown rice syrup or honey
1 tablespoon vanilla extract
Directions:
1. Pre-heat oven to 350 degrees F. Pour oats and coconut onto a baking sheet (18 x 13″), spread out, and toast for about 10 minutes. Set aside to cool.
2. In a small bowl, mix the applesauce, sweetener, and vanilla.
3. In a large bowl, combine the oat flour, cranberries, and walnuts. Add the oats and coconut when cooled and stir to combine. Add the applesauce mixture and stir thoroughly.
4. Line the baking sheet with parchment paper. Pour the mixture onto the baking sheet, spread out with a spatula, then press to compact with another piece of parchment paper.
5. Bake for 25 to 30 minutes or until bars are golden brown. Let cool then cut into bars. Store the bars in an airtight container or wrap them individually and freeze.
6. Enjoy as a snack or quick breakfast addition.
