Homemade Chocolate Chip Granola Bars
Preparation time: 15 minutes
Ingredients:
1/2 cup brown rice syrup (or honey)
1/2 cup almond butter (or other nut butter)
2 cups quick-cooking oats (gluten free if needed)
1 cup crispy brown rice cereal
1/2 cup shredded coconut (unsweetened)
1/2 cup raisins
2 tablespoons ground flax seeds (or chia seeds)
Directions:
1. Combine the first three liquid ingredients in a large bowl and stir until mixed thoroughly.
2. Add all of the remaining ingredients and stir until well combined.
3. Lightly grease a 13 by 9 inch pan. Pour mixture into pan and press flat to about 1/2 to 3/4 inch thick.
4. Refrigerate the pan for about 20 minutes then slice the pressed granola mixture into bars.
5. Wrap bars in plastic wrap or parchment paper and store in the fridge or freezer until ready to eat.
6. Pack as a snack. Enjoy!
