Cocoa-Coconut Popsicles

My good friend and Fort Collins Ba-Nom-a-Nom food truck owner Sarah brought these over this week. They are really yummy so (of course) I wanted to share this quick and easy recipe with you! While coconut milk is not low-fat or low-cal, it is filled with healthy fats (medium chain fatty acids to be precise), fiber, potassium, and magnesium. Want to learn more about Sarah? Cocoa-Coconut Popsicles

Yield: 8 servings

Prep time: 5 minutes

Ingredients:

1 can coconut milk (not light)Cocoa-Coconut Popsicles

2 tablespoons cocoa powder

1/4 cup organic cane sugar (or other sweetener of choice)

Directions:

1. Whisk together all ingredients.

2. Pour into foil muffin tins. Put 1/2 a popsicle stick in the center of each tin.

3. Freeze for at least 2 hours before serving. Enjoy!

Note: If you have popsicle molds, they would work great with this recipe instead of the muffin tins.
