Oatmeal Pancakes

These make a delicious and wholesome breakfast! We make these pancakes on the weekends pretty frequently with certified Gluten Free oats. Using GF oats will make them gluten free. They also keep well in the fridge for several days and are great reheated in the toaster oven. Give them a try.

Prep time:10 mins

Cook time: 10 mins

Yield: 2 to 4 servings

Ingredients:

2 cups rolled oats

2 cups water, milk, or milk alternative

1/2 cup applesauce

1 tbsp maple syrup or agave

1 tsp vanilla

Pinch sea salt

Directions:

1. Put all ingredients in a blender and blend until smooth

2. Let batter stand for 5 to 10 minutes to thicken

3. Heat a skillet with some oil and pour desired amount of pancake batter onto skillet

4. Cook pancakes for 2 to 3 minutes on each side

Enjoy!

NOTE: These also make great waffles. Use the exact same recipe and a shallow waffle iron. Let them cook fully before you remove them from the waffle iron.
