This evening, I gave a workshop at the Fort Collins Club called Healthy Eating on the Go. At the beginning of the workshop, I asked the participants “what is your #1 challenge to eating healthy on the go?” There were two main themes to the answers: lack of preparation and not knowing what foods to pack. Can you relate?
The participants got pretty excited when I talked about making salads (not just lettuce!) and having them for lunch, dinner, or sides for a couple days during busy weeks or taking them to potlucks and picnics.
Salads are awesome in the summer. They keep for 2-4 days in the fridge, are loaded with fresh vegetables and leafy greens, packed with vitamins and minerals, and are full of real food nutrition.
