Zesty Vegetable Lentil Salad
Prep time: 10 minutes
Total time: 30 minutes + 2 hours in fridge
Yield: about 6 servings
Ingredients:
1 cup green lentils, dried
3 carrots, medium
1 red bell pepper, diced
1/2 cup cilantro, chopped
3 scallions, diced
Dressing
1/4 cup lime juice
1 tablespoon toasted sesame oil
1 tablespoon Bragg’s Aminos
1 teaspoon cumin
1/2 teaspoon black pepper
1/2 teaspoon sea salt
Directions:
1. Rinse lentils then put in saucepan with 2 cups water, bring to a boil. Cook for 20 minutes or until lentils are tender. Remove from heat and let cool.
2. While the lentils are cooking, chop the vegetables and put in a large bowl. Next, combine all of the dressing ingredients and stir well.
3. When the lentils have cooled combine all ingredients, add dressing, and toss until well mixed.
4. Cover bowl and refrigerate for 1 to 2 hours before serving. Serve cold.
